Roast Tomato and Smoked Bacon Soup


  • 40g butter
  • 8 tomatoes roasted
  • 1 onion
  • 1/2 leek
  • 2 celery sticks
  • 3 garlic gloves minced
  • 2 stock cubes
  • 100ml double cream
  • 100ml balsamic vinegar
  • 150g smoked bacon


1 – In an oven tray place the tomatoes with the balsamic vinegar and a place of salt and sugar, roast in the oven at 200 degrees for 20 minutes.
2 – In a saucepan saute of the smoked bacon, onion, celery and garlic in butter.
3 – Add the tomatoes to the saucepan with the stock, cubes and simmer for 40 minutes.
4 – Add the double cream and blend.
5 – Add a pinch of sugar and taste for seasoning.
